Baked Gujiya

Holi festival is incomplete without Gujiya and this tradition, recipe been passed on generation to generation. I still remember that one weak before the Holi festival grandma, maa prepare tons of fried gujiya. Than they packed them different container with the name of the all relatives. And I was waiting with enthusiasm when my mother would call me for Try eating one...I watched very carefully how my mother was making it. I did use to try my best to help them. Honestly say the taste of the traditional Mawa fried gujiya than soaked in sugar syrup can't compare with any other update version. Now taking about Sugar Free Baked Gujiya, in my house I started to making these, not only for that it's quite easy and time saving process, the main reason was my father and mother both are now diabetic. In this article I am mention every step in details, one more thing I want to mention that if you give any special design to your gujiya than baked it because in baking process the body n the design remain same, while in fried on sometimes you might notice little air bubbles get formed.

HEALTHY GUJIYA RECIPE :
  • For outer covering
  • 3/4 cup plain flour(maida)
  • 3/4cup wheat flour(gehu ka aata)
  • 1/2 cup refine oil
  • 1/3 cup water
  • A pinch of salt
  • For filling
  • 1/2 cup fine semolina(suji)
  • ½ cup wheat flour
  • 1 cup jaggery finely chopped or grated(gur)
  • ¼ ghee(clarified butter)
  • 2 tbs grated coconut or desiccated coconut
  • 2 tbs milk powder(optional)
  • 2 tbs almonds chopped
  • 2 tbs cashew chopped
  • 2 tbsp raisins
  • 1 tbs pistachio chopped
  • 2-3 tbs dates chopped (optional)
  • ½ tsp cardamom powder
FOR FILLING :
  1. For the filling heat a pan and add Ghee to it .Once the ghee melts add raisins to it.as soon as it puffs take the raisins out and keep aside. 

  2. Add semolina in the same ghee and roast it on medium heat until it gives a nice aroma and slightly change in colour. 

  3. Add coconut and other dry fruits and roast for a minute. 

  4. Switch off the flame and add jaggery. add raisins and let the mixture cool.
DOUGH MAKING :
1. In a large mixing bowl mix both the flour. Add pinch of salt and refine oil And mix them with your hands  until resemble breadcrumbs like texture.
 
2. Now add water little at a time. Mix the dough until it just comes together. Try to make the dough quite hard just like when we take out little ball from the dough you have to put a little force to break it. Cover it with moist cloth for 20 mints. 

3. If you wish to make colorful gujiya than divide the dough and mix 2drops of liquid food color of your wish.

MAKING THE GUJIYA:
  1. Now take a small ball out of the dough and roll it to a small puri (circle). 

  2. Put 1-2 tbs of filling on one side of the puri, apply water on the sides and fold it in to half making half circle shaped dumplings. 

  3. Shape all the gujiyas similarly and arrange in a baking tray lined with baking paper. 

  4. Brush some oil on top and bake it in a preheated oven at 180 degrees for 15-20 mins or until golden brown in colour.
